Preparation & Storage Guidelines
If you are providing "prep" instructions for a retail customer or training staff, these are the safety benchmarks:
Storage
Temperature: Store at or below 41°F (5°C). Do not allow them to freeze.
Orientation: Store oysters cup-side down to retain their natural liquor (the liquid inside).
Breathing: Never store oysters in an airtight bag or container; they are alive and need oxygen. Cover them with a damp cloth to maintain humidity.
No Fresh Water: Do not store them sitting in melted ice or fresh water, as this will kill them.
Preparation (Shucking)
The Tap Test: Before shucking, tap any open oysters. If they do not snap shut, they are dead and must be discarded.
Cleaning: Scrub shells under cold, running potable water with a stiff brush to remove sand and debris before opening.
Cross-Contamination: Use a dedicated shucking knife and board. Wash your hands and sanitize the station between batches.
Service: Serve immediately on a bed of crushed ice to maintain a safe temperature until consumption.
